Restaurants in Lombok already offer the diner more than 20 different cuisines and that number is increasing constantly. The biggest variety is around the Senggigi area, Lombok’s centre of tourism.
In the capital, Mataram, the accent is on Chinese seafood restaurants and those selling Lombok’s famous Ayam Taliwang [small spring chickens, first marinated then grilled over coconut embers before being married with the wonderful hot, spicy and very piquant Sambal Ulek [100 different recipes most of which begin with unseeded red chillis, all the remaining ingredients and their quantities kept a closely guarded secret], Dua EM is one of the best unless you venture down along the street stalls towards Cakra in the evenings.
Great fresh seafood is always available at Senbilan-Senbilan  and the same, but with a wide variety of Cantonese sauces and cooking styles, at Seafood Nikmat. Al Hamra is a simple though excellent Mataram restaurant featuring Arab cuisine, inlcuding amazing Pizzas from Yemen, strong coffee scented with cloves and cinnamon and many other interesting discoveries.
Senggigi is a combination of high quality hotel restaurants, stylish stand alone ones such as Square and a myriad of small specialty restaurants/warungs offering Indian, Thai, German, Japanese, Korean, Mexican, Italian, Vietnamese and Chinese cuisines amongst the general International mix and a choice of both Indonesian and local Lombok food.
